Product description

Le Repertoire de la Cuisine / The Cookery Repertory - L. Saulnier tr. E. Brunet (c.1960s)

Louis Saulnier (tr. Edouard Brunet), "Le Repertoire de la Cuisine. Translated from the Original French Edition by E. Brunet (Chef to the Duke and Duchess of Roxburghe)" [title on spine: "The Cookery Repertory - 13th edition"; title on front cover: "Le Repertoire de la Cuisine - Standard Edition"] (London, Leon Jaeggi & Sons Ltd.; undated, but has a c.1960s appearance). Hardcover (maroon cloth-effect textured boards), 240pp plus title / introductory / index pages, with thumb index for ease of reference, measuring approximately 12.8 x 19.1 x 1.9cm (5.05 x 7.5 x 0.75in). A vintage book of "about 7,000" recipes for the use of experienced chefs and cooks (i.e. assuming professional kitchen knowledge - there are no details of quantities of ingredients, temperatures etc. as are usual in books intended for use by the general public) - and also useful as a guide to the French cookery terms used on restaurant menus.

No dustjacket; the cover is well worn with marking, staining and surface wear to the boards, wear to the edges, bumping to the corners and tearing / slight loss to the spine; the pages (and the inside covers and endpapers) are discoloured with tanning to edges, slight foxing and various other marks together with occasional creases and general wear from age and use; the front endpaper bears the name and address of a previous owner in black ballpoint, and a name has been written on the bottom page edges in black ink (visible when the book is closed). It nonetheless remains complete and fully legible, and is thus offered for sale as a working or reference copy of this vintage culinary reference book.
